Working on the kill floor, Zavaleta saw ten thousand hogs slaughtered every single day in an amazingly efficient production line. As an artist, he took advantage of this bleak day job to develop a body of work that brings to public attention, the immoral way these animals are killed, bled to death and dismembered.

Immony Men's installation Last Night at the Chestnut is the result of a two week residency. The artist's goal was to create an exhibition that reflects the history of the building Gallery Connexion is housed in. Using research from the Provincial Archives including transcribed interviews from factory workers, books on the Chestnut Canoe Factory, and a compilation of memories and stories of local community members.

10 years ago the artist began collecting and editing bait bags, rope and fishing tackle, that wash up on the shore by his home in Nova Scotia. These cultural artifacts – the flotsam and jetsam of salvaged fragments of tools and materials, resonate for the artist as evidence of the expiring offshore fishery.
